My mom holds the title of “fruit cobbler queen” in my book. She can make this classic Southern dessert using any fruit, and every batch is sweet and buttery with just a hint of tartness. Her peach cobblers are my favorite, and making them is a real labor of love — she gently poaches the fruit to remove the skin and whips up a biscuit topping by hand. Ingredients (Serves about 6):

  • 4 cups fresh ripe peaches, pitted and sliced
  • 1 stick unsalted butter 
  • 1 cup self-rising flour 
  • 1 cup white sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • Ice cream (for serving)

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place butter in dish and allow to melt in oven.
  3. In a bowl, mix 1/2 cup sugar with peach slices. Set aside. 
  4. In second bowl, whisk together flour, 1/2 cup sugar, milk, and vanilla. Pour mixture over melted butter – do not stir to combine.
  5. Spoon peaches into batter – without mixing.
  6. Bake 40 minutes or until golden brown and bubbly.
  7. Let cool 5 minutes and serve warm with ice cream.

My Taste Test

Having 10 large peaches on hand, I doubled this recipe when making it. The freshly baked cobbler was a sight to behold and the wait before taking the first bite wasn’t long –  thankfully!

Trying a spoonful of the cobbler, I noticed right away that the peaches were tender without being mushy. The topping had an airy texture that complemented the softness of the cooked fruit. Plus, the sugar mixed with the peaches’ juices created a sweet syrup that kept the cobbler spongy and moist.

This straightforward recipe is going directly in my back pocket. Plus, it’s peach season — so I’ll have extra fruit that I can put to good use!
